How do you get quality coffee?
The first answer is to select the best raw materials, but this is only part of the process. Coffee is a “living” product, it grows in countries far away from ours, influenced by the climate, the soil, the cultivation and harvesting methods.
For this reason, over time, the batches of origin can change, putting at risk the organoleptic stability that a coffee blend must have.
We at MokaJEnne know this well, which is why our “quality program” is developed in four fundamental steps: the selection by tasting of samples of new harvests, the verification of purchased coffee-approved sample, the improvement of the blend through further cleaning with an optical sorter, the final tasting of the blend with the new ingredient with the old blend to verify deviations and any corrections.

Our mission is to invest in constant quality improvement, through a modern plant, with high production capacity, maintaining the skills and human know-how acquired over time. A laboratory for research and selection of raw materials.
A food grade stainless steel plant, equipped with four advanced roasting machines, from the sampler for just 200 gr, to the main 120 kg, through a 2 and a 15 kg for gourmet production.
An optical selector to perfect our blends from the smallest impurities. A connected roasting system, which allows you to record the individual cooking curves of our coffee origins, save them, and modify them according to the desired results.
